Amor di Polenta is a very tasty and delicate cake, easy and quick to prepare using just a few simple ingredients.
Ingredients:
- 100 g fine cornmeal (fioretto)
- 80 g all-purpose flour (type 00)
- 100 g butter
- 120 g sugar
- 70 g almond flour
- 2 medium eggs
- 10 g white rum
- Seeds from half a vanilla pod
- 8 g baking powder
Preparation:
To prepare Amor di Polenta, start by placing the room-temperature butter (cut into pieces) and the sugar into the bowl of a stand mixer fitted with a whisk attachment. Beat them together for a few minutes until creamy.
Add the eggs one at a time, beating well to obtain a smooth and even mixture.
Next, add the vanilla seeds and baking powder. Then, sift in the flours: first the all-purpose flour, followed by the cornmeal, and finally the almond flour. Mix thoroughly.
Finish the batter by gently folding in the white rum using a spatula.
Brush your special Amor di Polenta mold with melted butter, making sure to reach every groove.
Pour the batter into the mold and smooth the surface with a spatula.
Bake in a preheated static oven at 170°C (338°F) for about 45 minutes (or at 150°C / 302°F for 35 minutes if using a fan oven).
Once baked, remove from the oven and let the cake cool slightly before turning it out onto a serving plate.
Your Amor di Polenta is now ready to be served! Dust with powdered sugar if desired.
