Ingredients
Shortcrust pastry:
- 120 g sugar
- 430 g flour
- 60 g cornstarch
- 200 g semi-cold butter
- 100 g beaten eggs
- A pinch of baking soda
- A pinch of salt
- ½ vanilla pod
Custard cream:
- 400 g milk
- 6 egg yolks
- 200 g cream
- 45 g flour
- Grated zest of 1 orange
- 2 tablespoons orange juice
- 10 g cocoa powder
- 140 g sugar
To brush:
- Beaten egg mixed with a little water
Decoration:
- Sugar sprinkles
- Apricot jelly
Preparation
Custard:
Mix the milk and cream. Beat the yolks with the sugar, then add a small amount of the milk mixture, stirring constantly. Incorporate the flour using a whisk, then gradually add the remaining liquid. Place the saucepan over heat and stir continuously until the cream thickens.
Remove from heat, then add the grated orange zest and juice for flavor.
Divide the cream into two portions; add the cocoa powder to one. Cover both with plastic wrap in contact with the surface and allow to cool.
Shortcrust pastry:
Combine the flours, baking soda, salt, vanilla seeds, and sugar. Add cubed butter and begin working it into the dry ingredients, then incorporate the beaten eggs. Mix everything together and divide the dough into two portions, one slightly larger than the other.
Roll out the larger portion and line a buttered, floured tart pan, letting the dough slightly overhang the edges. Prick the bottom with a fork.
Pour in the cocoa cream first and level it, then pour the yellow cream on top.
Roll out the remaining dough (reserve a little for decoration) and place it over the top of the cream, sealing the edges carefully. Trim any excess dough.
With the leftover dough, shape small balls and attach them around the edge of the tart using the egg and water mixture. Brush the balls with the same mixture.
Bake at 170°C (338°F) for 40 minutes, then continue baking for another 10–12 minutes with heat from the bottom only.
Remove from the oven, let cool for 10 minutes, then unmold and place on a wire rack to cool completely.
Decorate with sugar sprinkles, using a bit of apricot jelly to help them stick.
